Gooey Butter Cake




A co-worker, Carolyn, in Louisville way back when, baked this cake the first time I ate it and it is ooey, gooey good; a great tasting rich cake!  Temptingly sweet and delicious, these sweeties actually fall somewhere between a bar-type dessert and a coffee cake.   It makes your teeth hurt just smelling it!

Gooey Butter Cake originated in St. Louis and was actually the result of a cooking accident by a German baker in the 1930’s.  He was trying to make regular cake batter but reversed the proportions of sugar and flour; the result was a hit and named Gooey Butter Cake. The cake is a bit quirky as it consists of two layers:  the bottom being a rich dense layer of yellow cake and butter and the top layer all gooey with cream cheese, eggs, powdered sugar and vanilla. 
 
Because it is made with a cake mix, it is fast and easy.  It could even be tweaked with coconut embedded in the cake and it would be the next best thing to a Mounds Bar.  If you’ve never made this cake, you need to give it a try! It won’t make you healthier but, it surely will taste good!!!


Gooey Butter Cake

Ingredients:

Cake layer:
1 box yellow cake mix
½ cup melted butter
2 eggs

Mix and press into greased 13” x 17” jelly roll pan.

Top layer:
1 package 8 ounce cream cheese, softened
2 eggs
1 teaspoon vanilla
½ to ¾ box powdered sugar

Beat well for 3 minutes.  Pour over top mixture.
Bake at 325 degrees for 35 minutes.
When cool, dust top with powdered sugar.

Yummy buttery, gooey!!!

Gooey Butter Cake is a delicious buttery cake to go with a cup of coffee on a chilly night!   Or, make it a decadent morning treat; any way, it takes the cake!
