My Grandma's Potato Salad Recipe
in Salad Recipes, Vegetables on Thursday, December 1, 2011
On Saturday we had a surprise 80th Birthday Party for my MIL so my hubby and I spent 12 hours on Friday cooking and preparing things for the party. I always bring potato salad to the family events and parties because everyone loves the recipe that I use which was given to me by my maternal grandma before she passed away. I am going to share it with my blog readers today.
Grandma's Potato Salad
6 med. potatoes (cooked and diced)
3 hard cooked eggs, cooled
1/2 c. chopped celery
2 tsp. vinegar
1/4 c. chopped onions
1 tsp. salt
2 tsp. bacon grease
1/2 tsp. pepper
1/2 c. water
1/4 tsp. celery seeds
1/2 c. sugar
3/4-1 cup mayonnaise
2 egg yolks
1/2 lb. bacon (fried and chopped)
Brown bacon in a frying pan until crips. Drain off the bacon grease and save 2 teaspoons of it. Beat 2 egg yolks, water, sugar, vinegar and bacon 2 tsp. bacon grease in a saucepan and cook over low heat until it starts to thicken up. Pour over potato mixture. Add the remaining ingredients and mix well. Refrigerate for 3-4 hours before serving.
