Beef Patties with Cheese Sauce

1 1/2 lbs. lean ground beef
1 sm. onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 Tbsp. minced parsley
2 eggs

Cheese Sauce

2 Tbsp. butter
2 Tbsp. flour
1 c. milk
1 tsp. Dijon-Style mustard
1/2 tsp. salt
3/4 c. diced Cheddar Cheese
1 sm. fresh tomato, chopped

Garnish

4 slices mild cheddar cheese
2 slices tomato

Mix ground beef, onion, salt, pepper, parsley and eggs in a large bowl. Divide into four parts. Shape each into a ball; flatten slightly. Place into a baking dish. Bake at 400 degrees F for 20-25 minutes or until meat is done. While meat bakes, prepare cheese sauce. Melt butter in a small pan and add flour. Over high heat, stir in milk, heat to a boiling and whisk until thickened. Stir in mustard, salt and cheese. Stir until cheese is melted. Add tomato. Pour sauce over cooked meat patties. Top with a slice of cheese and a slice of tomato. Return to oven just long enough to heat the tomato and melt the cheese. Serve immediately.
