Patties

     How are you doing this morning.  It's finally the weekend and I am sure you are feeling as good as me.  I am dying to get out and walk in the woods somewhere.  Yes, as soon as we have had this visit I will scour the internet to find somewhere nice to take off on a day excursion tomorrow.  Guess what I have to make a neat sandwich?  Culmination of English and Indian you could say.  Kabab like patties.  I say that because I sneaked some 'Shan Kabab masala into the ground beef I had together with some more ingredients and popped in the oven.  Oh, boy! never did a spur of the moment idea turn out so well.  Tasted like kababs though the texture was not as good because I refused to grind the meat fine in my mixer.  However, if you do have a way of grinding fresh meat at home do that with the recipe that follows and you will be making some delicious kababs at home.

   It's tart and hot and will go into a wrap or sandwich bread and make a pretty good lunch.

Ingredients:

Ground Meat - 1/2 lb
Onions      - 1 small finely chopped
Ginger garlic paste - 1/2 tbspn
Salt        - 1/2 tspn
Lemon juice - a squeeze ( I am thinking about 1 tspn)  Please be careful how much you add because the quantity of meat is very little.  Also, if you are using ginger garlic paste its already salted and had a sour taste.
Mint Leaves - 3 sprigs (take out only the leaves and chop fine)
Green chilies - 3 finely chopped or 2 well ground
Shan kabab masala - 1 tspn 
paparika -  a dash
pepper   -  a dash

Method:
1. Mix all the ingredients together.  (Use a glove if you do not like to work with fresh meat)
2. Make small patties, as thin as you can with the palm of your hand and place it on an oven proof tray
4. Bake at 400 D for 20 minutes.  Turn the patties with a spatula after 10 minutes and brush the juices the meat express back on.

Enjoy it as is or sandwiched between bread or crumbled into a wrap with your favorite salad dressing.

Shepherd's Pie

 If you are a lover of shepherd's pie, today's recipe will either disappoint or thrill you.  I changed the spices rosemary, thyme and basil to cloves, cinnamon and cardamom.  I used a little garam masala in short.  I even threw a sprig of curry leaves for experiment and what do you know, it did quite well.  The only step I regret is not having drained the fat after browning the meat.  Else, I am delighted the way it turned out.

  I quite like Shepherd's pie.  The first time I had it at a friend's place was  a long time ago.  In Kerala, I doubt we were getting minced meat at that time and therefore she cooked and then ground the meat for the pie.  It was good but the texture of the pie was like that of pulled pork in sauce.  However, when cooked  with fresh ground meat its plenty different and I like it better.  Thereafter, I have had shepherd's pie in quite a few places and mostly pleased with them all.  Especially good, I  remember, is the one served at '13th floor' a restaurant in Bangalore.  Now, did I get that restaurant name right? I am talking about the one on MG Road.  The pie that evening was made with lamb and it was delicious. That is probably the last time I had pie outside home.

  About three or four years back I started cooking it at home using a recipe from an Australian cook book.  It's an old book and I had a photocopy from a friend.  A darn good one I dare say but cannot remember the name.  Now that I have been cooking a while, I finally created my own version today.  I am rather glad the way it turned out like I mentioned earlier.  Moist and spicy it's a meal in itself and I can already think of  possibilities with the left overs.  Enjoy!      

Shepherd's Pie

Ingredients:

For the first layer:
1. Minced meat (I used beef) - 3/4 lb
2. Onions - 2 small size chopped fine
3. Ginger - 1 Tbspn
4. Garlic - 1 Tbspn
5. Green Chilies - 5 - 6 thai
7. Paparika - 1/2 tspn
9. Black pepper - sprinkle
10. Curry Leaves - 1 Sprig
11. Garam Masala - 1/2 tspn
12. Tomato - 2 medium size chopped fine

For the Topping
Potato - 2 russet potato
Butter - 2 Tbspn
Sour Cream - 3 Tbspn
Milk - 2 to 4 Tbspn (use it accordingly when creaming)
Parmesan cheese - to spinkle on top
Paparika - to spinkle

Shepherd's Pie

Method:
1. Brown the meat in a skillet or any cooking vessel. Here, we are only looking for change of color of the meat from pink to brown
2. Oil will clear at this time unless you are using 100% lean meat
3. Drain some or all the fat
3. Add chopped ginger, garlic, onions and green chilies and continue to cook. Wait for cooked garlic smell and onions to be translucent
4. Add curry leaves and stir
5. Add paparika and pepper if you want it to be spicier or you may not use them also
6. Add 1 1/2 tspn of all purpose flour and stir into the meat and cook for a couple of seconds
7. Add chopped tomato and cook
8. Add 1/2 cup of water and bring to boil
9. I take around 20 minutes for the whole process from the time I start browning the meat
10. You may use 1/2 cup of beef broth too if you like. I don't, I think water is just fine.
11. Set aside

Shepherd's Pie

Topping:
1. Dice the potato and cook in about 3/4 cup of water
2. Check with a fork to make sure potato is well done and drain off any excess water or cook it dry
3. Add the butter and sour cream and whip using a blender.
4. Add salt to taste and milk to soften if the potato is too pasty. You do not want it running and not too stiff either.

Layering:
1. Butter a oven safe dish
2. Add the cooked meat and then the potato over it. Sprinkle cheese and paparika and cook in a preheated oven at 400 D for 20 minutes.
3. The meat mixture will boil and bubble at the sides and this is okay.

Shepherd's Pie

Server it with rolls, steamed vegetables or even with rotis.
This will serve 4 people.

Crock Pot - Old Fashioned Beef Stew Recipe

During the fall and winter months, I enjoy making hearty soups and stews in my crock pot for my family. I love the fact that I can spend a few minutes in the morning preparing it, put it into the slow cooker and walk away...a few hours later, our dinner is hot and ready to enjoy.

The following recipe was given to me by my 83 year old great aunt about 25 years ago. To this day, I still enjoy making it for my family. If you don't like okra, you can certainly omit it from the recipe. At times, I have actually substituted the okra with some fresh green beans or green peas, and the stew was just as delicious.

Old-Fashioned Beef Stew Recipe

2 lbs. beef cubes
1/2 cup all-purpose flour
2 tablespoons vegetable oil
1 bay leaf
1 1/2 tablespoons Worcestershire sauce
1 onion, finely chopped
1 cup beef bouillon
1/2 teaspoon ground black pepper
2 teaspoons table salt
2 teaspoons granulated sugar
4 carrots, peeled and sliced in 1" sections
1 cup celery, chopped
4 potatoes, peeled and cut into cubes
4 medium-sized turnips, peeled and quartered
4 1/2 cups water
1 cup partially cooked okra

In a large frying pan, heat up the vegetable oil over medium heat. Brown beef cubes on all sides.

In your crock pot combine the browned beef cubes, bay leaf, Worcestershire sauce, onion, bouillon, pepper, salt, granulated sugar and the vegetables listed in the recipe. Pour in 4 1/2 cups of water and stir so that everything is combined.

Cover and set the dial to high heat and slow cook for 6 hours. Remove lid and stir in flour if it is needed to thicken the soup. Replace lid and turn the dial to low heat and simmer for 1-2 additional hours.

This recipe will make 6 hearty servings.

Stuffed Green Bell Peppers





I grew up with Mom making stuffed green peppers and thought it was one of the best meals in the summertime.  Then they became a “must eat” in my own house with Bill and I and both boys loving them. 

Stuffed peppers are filling, easy to make and I would go so far as to serve them to company.  It’s just a good home-made meal that most of us like ~ a great comfort food, for sure. 

Green bell peppers are pretty, colorful to look and if you prefer red bell peppers for the color, use them.  It’s a great thing ~ your whole meal in a stuffed pepper, veggies, carbs and protein!  And eating them makes a super supper!

Stuffed Green Bell Peppers

Ingredients:

6 large green bell peppers
2½ cups rice, your choice
2 pounds lean ground beef
1 medium onion, chopped
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 (14.5 ounce) can Hunts Diced Fire Roasted Tomatoes
1 (10 ounce) can Rotel diced tomatoes and green chilies
1 teaspoon salt
½ teaspoon pepper
16 ounces (4 cups) sharp Cheddar cheese, grated

Method:

For peppers:
Fill large pot almost half full with water and bring to a boil.
Cut peppers in half from stem on top to bottom.
Remove seeds and ribs.
Place peppers in boiling water.
Simmer for 4 minutes.
Remove and drain.  Set aside.

For rice:
Cook rice according to package directions.
Set aside.

For beef mixture:
In large skillet, brown the ground beef, onion and garlic.
Drain the meat well when done.
Add both cans of tomatoes to meat.
Add Worcestershire sauce, salt and pepper.
Combine well and simmer for 10 minutes.
Check for seasonings.

When meat mixture is done, add cooked rice and combine well.
Simmer over medium-low heat for 5-10 minutes until most of the juice from the tomatoes is absorbed.

Place peppers in a 9-inch x 13-inch baking dish.
Stuff peppers.
Cover with foil.
Bake at 375 for about 30-40 minutes until heated through.
Remove foil.
Sprinkle cheese over top.
Bake, uncovered, for about 5 minutes or until the cheese melts.
Serve



Pam’s note:  I must tell you:  Bill is not a fan of green bell peppers at all!   When I made them stuffed as a whole pepper standing up, he would take the meat out and leave the pepper.  Then, with this recipe, cutting the peppers in half, he loves the peppers and eats it all with relish!  Guess size makes a difference!

Easy To Make Classic Spicy Chili Recipe

If you are looking for a moderate to spicy chili recipe, then you should try this one. If you like more heat in your chili, you can increase the chili powder and red cayenne pepper.

Classic Chili Recipe

2 lbs. lean ground beef
1 clove garlic, minced
2 medium onions, finely chopped
1 1/2 teaspoons table salt
2 tablespoons chili powder
1/4 teaspoon red cayenne pepper
dash of cloves
2 large cans kidney beans plus juice
1/2 teaspoon black pepper
1 teaspoon paprika
2 teaspoons basil
4 cups tomato juice
1 can crushed tomatoes

Note: If you like it really spicy, you can increase the chili powder to 4 tablespoons.

In a large skillet, brown your lean ground beef with minced garlic and finely chopped onions until ground beef is no longer pink. Drain grease from beef and set aside. In a large stock pot, combine all of the above ingredients including the spices. Stir in the browned ground beef. Turn heat to low and simmer for approximately 45 minutes or until its done.

Potato Stuffed Meatloaf Recipe

If you enjoy eating meatloaf but looking for an old-fashioned twist to the traditional meatloaf recipe, I think you will enjoy this vintage 1935 recipe.

Potato Stuffed Meatloaf

1 1/2 lbs. lean ground beef
1/2 lb. ground pork
1 tablespoon onion, minced
2 tablespoons horseradish sauce
1 egg, lightly beaten
1 teaspoon table salt
1/2 teaspoon black pepper

In a large bowl, combine all of the above ingredients together in the order that they are given. Place mixture in a 9" by 5" by 3" loaf pan and pat it down so that it measures approximately 1" thick in size.

Potato Stuffing Topping

4 cups mashed potatoes
1/2 teaspoon table salt
1/2 teaspoon paprika
2 tablespoons pimento, minced
2 tablespoons green pepper, finely chopped
2 egg yolks, lightly beaten
1/4 cup cold milk

In a large bowl, combine the above ingredients together in the order given. Pour the mixture into the loaf pan on top of the meat mixture. Bake for 1 hour in a 350 degree oven. Remove from oven and if desired, sprinkle your favorite cheese on top and place back into the oven for 5 minutes to melt the cheese.

Kelly’s Calico Beans





I remember the time she was born, just like it was yesterday, when we received a letter a good week after her arrival in the world.  She was born a month and 4 days after Bill and I married, while we were living in Oberheid, Germany when Bill was serving in the Army.   We were used to letters with more than week old news and were thrilled to get them no matter. 

I’m talking about our dishy sweet niece, Kelly; the daughter of Bill’s brother.  Kelly’s charming and funny ~ spunky and feisty as a fox.  She’s a fast thinker with the right words to say and most important of all, she has a warm, caring heart.

Kelly and her husband, Jim,  are the proud parents of two boys ~ one in his second year at the University of Pittsburgh and their little guy is 7 years old; a second-grader this fall.  So Kelly knows her way around sports and the kitchen too.  And to prove it, among other things she cooks a mean bean dish.

I’m a great fan of baked beans, really any kind of beans and this recipe turns baked beans into an impressive full-flavored side dish.  Kelly adds more bacon, usually a pound and said that the easy way to cook them is in a slow cooker, so that’s what I did.  The recipe calls for 4 types of beans:  1 can each of Great Northern, butter and kidney beans, plus 2 cans of pork ‘n beans. 

Like she told me, about any type of bean can be used so I swapped Pinto beans and mayocoba beans for the butter beans and kidney beans because I know some people who swear they don’t like butter beans or kidney beans.  What they don’t know is that the medium-sized, ivory-yellow mayacoba beans are a meaty bean with a mild-flavored buttery taste.

What makes this dish unique is the addition of not only salty smoky bacon, but browned ground beef.  Then, when they’re combined with the beans and the tangy sweet sauce you have a delicious side dish for your family or a crowd.  They go quickly and that can be good but, bad too because they are just as delicious left-over!  Just ask Bill ~ he said they’re the best!



Calico Beans

Ingredients:

½-1 pound bacon
1 pound lean ground beef (90% lean)
1/2 cup chopped onion
2 cans (16 ounces) pork ‘n beans
1 can (16 ounces) pinto beans, rinsed and drained
1 can (16 ounces) mayocoba beans, rinsed and drained
1 can (16 ounces) Great Northern beans, rinsed and drained
½ to ¾ cup packed brown sugar
½ cup ketchup
2 tablespoons cider vinegar
1 tablespoon dry mustard

Method:

In a large skillet, cook bacon over medium heat until crisp. Drain well and crumble into large pieces.
In the same skillet, cook beef and onion over medium heat until the meat is no longer pink; drain.
Combine the beef mixture, bacon, beans, brown sugar, ketchup, vinegar and mustard.
Spoon into a greased 2-qt. baking dish or slow cooker.
Bake, uncovered, at 325° for 45-60 minutes or until the beans are as thick as desired.
Or, cook for 4-5 hours on low in slow cooker.
About 12 servings

Meatball Stew With Egg Dumplings Recipe

I love to make this recipe for my family, especially during the fall and winter months but you can make it any time of the year.

Meatball Stew with Egg Dumplings

1 lb. ground beef
3 tbsp. sour cream
1/4 cup onion, chopped
1 tbsp. parsley
1 tsp. salt
1/8 tsp. pepper
1 (10 1/2 ounce) can cream of celery soup
3 tbsp. sour cream
1 (16 ounce) can peas
1 (16 ounce) can green beans
1 (16 ounce) can carrots
1 (15 ounce) can potatoes, drained and sliced
2 cups Bisquick baking mix
2 eggs
2 tbsp. milk

Mix ground beef with 3 tablespoons of sour cream, onion, parsley, salt and pepper. Shape into 1" sized balls. Brown meatballs on all sides over medium heat in a large frying pan. Mix soup, 3 tablespoons sour cream, peas (with pea liquid), green beans, carrots and potatoes, pour over meatballs. Heat to a boiling, stirring frequently. Transfer above mixture to a large stock pot if it won't fit into your frying pan.

Stir remaining ingredients together (Bisquick, eggs and milk) to make a soft dough. Drop dough by spoonfuls into hot mixture. Cook uncovered, over low heat for 15 minutes, cover and cook for an additional 10 minutes. Serves 4-6 people.

Easy Zucchini Parmesan Casserole Recipe



We seem to get an abundance of Zucchini in our garden every summer and one of the ways I like to use them up is with a casserole like this one. It makes a great family dinner.

Zucchini Casserole Recipe

2 medium Zucchini
1 lb. lean ground beef
4-5 slices of your favorite cheese (we like cheddar)
2-3 beaten eggs
1 large can tomato sauce
Parmesan Cheese

Peel and slice the zucchini into the bottom of a casserole dish. Brown the lean hamburger and drain the grease. Place hamburger in casserole dish to cover the sliced zucchini. Place cheese slices on top of burger. Pour beaten eggs over top and then pour tomato sauce on top of that. Finish up by sprinkling Parmesan Cheese on top. Place casserole in a 350 degree oven for 45 minutes.

I was able to bake my casserole in the Tupperware Chef Series 3 quart casserole dish. You can find a lot of awesome Tupperware products on my website.

Hungarian Goulash Recipe

This casserole dish will bake up and be on the dinner table in less than 45 minutes.

Hungarian Goulash

1 cup onion, chopped
2 tbsp. shortening
1 lb. lean ground beef
1 1/2 cup celery, chopped
1 (4 ounce) pkg. macaroni, cooked
1 can cream of tomato soup, diluted
1/2 cup chili sauce
1 (20 ounce) can kidney beans

Brown onions and then stir in meat and brown lightly. Add celery and simmer until tender. Cook and drain macaroni noodles. Add tomato soup (use 1 can of milk or water to dilute it). Add chilic sauce and hamburger mixture. Stir in the can of kidney beans. Place everything into a casserole dish and bake in a preheated 350 degree oven for 30-40 minutes.

Cheese Beef Sticks



Bubba has made another great thing! 


Many years ago, when man started eating meat, the only way to preserve it was to dry it.  Beef sticks are an excellent source of protein with most of the fat being removed.  It’s easy to make and by making it yourself, you know exactly what has been added to it; no chemicals and preservatives.  And besides that, it tastes so much better than store bought! 

Bubba likes to cook and experiment with the ingredients in recipes.  He has made this recipe with many different combinations and finally ended up with this great recipe.  It has a little heat with the jalapeños.  Then, Bubba flavored the beef with lots of garlic, cayenne, black pepper, liquid smoke and the star ingredient, sharp cheddar cheese.

He mixed together the ingredients and extruded it through a jerky gun.  I really have never seen one but it works on the same principal as a caulking gun or my cookie gun for shaping spritz cookies, etc. The final part of the process is dehydrating the sticks in a dehydrator per the manufacturer’s instructions.  It’s a wonderful thing for a snack!

CHEESE BEEF STICKS

Ingredients:

2 ¼ pounds, 90% ground beef
4 ounces sharp cheddar cheese, grated
5 jalapeños
3 tablespoons minced garlic
1 tablespoon cayenne pepper
1 tablespoon black pepper
2 tablespoons Morton Tender Quick Cure
1 tablespoons liquid smoke


Method:

Place jalapeños and garlic in food processor.
Purée, almost liquefy them.
Place all ingredients in a large bowl.
Mix well then knead until all ingredients are well blended.
Place in refrigerator for 1 hour.
Using a jerky gun, extrude the mixture out into tubes about 3/8” diameter.
Dehydrate for 5½  hours.
Cool.
Refrigerate.

Mexican Style Soft Shelled Taco Roll-ups Recipe



We love mexican food here at our home and eat it a few times every week. We like to just throw together whatever we have on hand and make our own mexican-style creations. A few nights ago, this is what we came up with.

Mexican Style Soft Shell Taco Roll-ups

large floured tortillas
1 lb. lean hamburger
1 pkt. taco seasoning
chopped tomatoes
chopped green peppers
chopped lettuce
chopped onions
sour cream
cheddar cheese
taco cheese mix
1 can refried beans

Brown up your lean hamburger and then follow directions on the taco seasoning packet. Chop up your fresh veggies and place in a bowl. Microwave refried beans for 2 minutes or until hot. We microwaved our flour tortillas for 15 seconds on high power. We then loaded the tortilla up with all of our goodies.

Sirloin Steak and Peppers over Rice





I’m a total carnivore who really likes about any meat, but especially sirloin steak.  Although, my favorite way to enjoy steak is cooked rare on the grill with a dash of salt, once in a while I enjoy it smothered with peppers and onions and so does Bill. 

Turning your favorite steak into a stir-fry dish makes for a gratifying quick dinner that your whole family will like.  Having all the ingredients prepped and ready to add to the skillet makes it easy, easy. 

Pepper steak is another of those comfort food dishes that’s full of flavor ~ color also and I hope you enjoy this as much as we do!






Sirloin Steak and Peppers over Rice

Ingredients:

1 pound sirloin steak, cut into 2-inch strips
1 tablespoon oil
1 large onion, sliced
3 cloves garlic, minced
1 cup beef broth
½ teaspoon each salt and pepper
2 tablespoons Worcestershire sauce
2 green bell peppers, sliced into thin slices
1 red bell pepper, sliced into thin slices
½ cup cold water
2 tablespoons cornstarch
4 cups hot cooked rice

Method:

In a large skillet, heat oil.
Add steak, onion and garlic and cook over medium heat until onions are translucent and steak is partially cooked.
Add broth, salt and pepper and Worcestershire sauce and heat through.
Add bell peppers and stir them in the mixture.
Cook for 5-8 minutes until peppers are cooked to your liking.
In a small bowl, whisk together cornstarch and water.
Add to steak mixture and stir until mixture thickens, about 2-4 minutes.
Serve over hot rice.

Beef and Vegetable Kabobs Recipe

yummy...I just love the summertime when I can hang out in the backyard and fire up the grill. One of my favorite things to make on our bbq grill is kabobs! Here is the recipe we use when we make beef and veggie kabobs.

12 (1-inch thick) cooked beef cubes
12 cherry tomatoes
12 medium mushroom caps
4 green peppers, quartered
12 broccoli florets
4 medium onions, quartered
6 slices of bacon
1/2 tsp. salt
1/2 tsp. pepper
3 tbsp. butter

Alternate beef cubes with vegetables on 6 skewers with a bacon strip on each. Melt butter in a saucepan, add salt and pepper. Brush each kabob with butter mixture. Place your kabobs on a hot grill and grill for 8-10 minutes or until done. Makes 6 servings.

Chicago-Style Hot Dogs ~ Happy Independence Day!




Give me one dragged through the garden, please!  If you’re not sure what that’s all about, I’ll tell you.  It’s the way to order a Chicago-style hot dog!  Don’t they look like great hot dogs?

If you love hot dogs, no other style of hot dog will do!  Classic Chicago-style hot dogs are legendary with their Vienna beef dogs, mustard, tomato wedges, chopped onions, juicy whole sport peppers, a dill pickle spear and celery salt sprinkled on a steamed sesame seed bun.  And don’t be putting your regular pickle relish on it ~ it has to be the neon green pickle relish ~ Nuclear Relish!

A hotdog is a humble thing made into something delicious and anyone can make a Chicago-style hot dog ~ all it needs is a little preparation.  Be sure to use the Vienna beef dogs so that you will hear the “snap” as you bite into them.  Whoever discovered this great blend of condiments for a hot dog was a genius!

Chicago-Style Hot Dogs

Ingredients:

2 Vienna Beef Franks; steamed, boiled or grilled
2 poppy seed hot dog buns, steamed
2 tablespoons yellow mustard
2 tablespoons Nuclear Relish
2 tablespoons chopped white onion
4 tomato wedges
2 dill pickle spears
4 sport peppers
2 dashes celery salt

Method:

Bring a pot of water to a boil. 
Place hot dogs in water and cook 3-4 minutes until hot.
Put a steamer basket into the pot and steam the buns for 2 minutes or until warm.
Place hot dogs in the steamed buns.
Pile on the toppings in this order:
Mustard
Nuclear relish
Onions
Tomato wedges
Dill pickles
Sport peppers
Celery salt
Nestle the tomato wedges between the dog and the side of the bun. 
Place the pickle on the other side.
And don’t even think about adding ketchup!

What could be better on the 4th of July than a Chicago-style hot dog, a baseball game and watermelon?

Stuffed Cucumbers





Unfortunately, I can’t take credit for this recipe as I had never heard of it before meeting Bill.  This is another recipe that belonged to his mother, Alice.  I do not remember how she arrived at it.  I’m guessing she had a plethora of cucumbers and tomatoes in the garden one summer and this is the result. 

I’ve adapted her recipe using instead of plain tomatoes, a couple of cans of diced tomatoes with garlic, basil and oregano and then added garlic powder for more flavor.

Cut the ends off the cucumbers first; peel them.  Then scoop out the seeds.  I do this very carefully with a paring knife.  I indent with the knife in a circle around the seeds, insert the knife and sort of twirl it in my hand and pull the seeds out.  Do not cut through to the meat of the cucumber!  That will cause them to split when cooking.  Then let them soak in a bowl of salt water for at 30 minutes.

Make the tomato mixture in a large pan and let simmer for at least 10 minutes.  Prepare the ground beef however you like it.  I add chopped onions, garlic powder, a little basil and oregano and finish with salt and pepper.  Gently stuff the cucumbers with the meat and place in the tomato mixture.  Take whatever meat is left over after stuffing the cucumbers and make meatballs.  Drop them into the pan along with the cucumbers and tomato mixture.

Use a large pan or Dutch oven to allow enough room to turn them now and then as they simmer.  It takes close to an hour for the cucumbers to be fork tender ~ they will turn almost transparent.  You will see the difference in their appearance after simmering for about 45 minutes.

They are incredibly delicious!

Stuffed Cucumbers

Ingredients:

3 or 4 cucumbers
2 (28 ounce) cans diced tomatoes with basil, garlic and oregano
1 medium onion, diced
1 teaspoon sugar
1 teaspoon garlic powder
Salt and pepper to taste
1 pound ground round beef

Method:

Peel cucumbers and scoop out seeds carefully.
They can be cut in half if they are large cucumbers.
Place in a large bowl of salt water and soak for 30 minutes.

Place tomatoes in dutch oven or large pan.
Add sugar, garlic powder, salt and pepper.
Simmer at least 10 minutes.

Prepare ground beef:
1 teaspoon garlic powder
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon salt
½ teaspoon pepper, or to taste

Drain cumbers.
Stuff ground beef mixture into cucumbers carefully.
Do not force or it will break the cucumber.
Add the stuffed cucumbers to the tomato mixture.
Make remainder of meat into meatballs.
Drop into tomato mixture.

Cook cucumbers on medium-low heat, a slow simmer, for 45 minutes to one hour until they become almost transparent.

Stir the tomato mixture occasionally and rotate the cucumbers once or twice.

Serve in individual bowls with plenty of the tomato sauce and a meatball or 2.

Crock Pot Salisbury Steak Recipe



If you are looking for an easy to make crock pot recipe, then you have found it! You only need 4 ingredients including water.

Salisbury Steak

9-12 hamburger patties
2 envelopes of brown gravy mix
1 envelope mushroom gravy mix or onion soup mix
water

In a large frying pan, brown hamburger patties on both sides. Dissolve brown gravy mix and mushroom gravy mix in 2 cups of hot water. Add gravy mixture and hamburger patties to your crock pot and cook on low for 4 hours or until done.

I Won Linda’s Cookbook ~ My Kind of Cooking!




Woo hoo!!!  I won, I won!

I am thrilled to say that I won Linda’s excellent cookbook, My Kind of Cooking!!!  The great thing with Linda’s cookbook is that ALL of the recipes are made with either 3-4-or 5 ingredients ~ they are hassle-free recipes.  It’s a wonderful thing! She has a drawing for it every month and you must check it all out at her interesting blog, My Kind of Cooking.   

See that delectable dessert on the cover of her cookbook?  It’s Butterscotch-Pecan Tart. You will be drooling at all the fantastic food photos, believe me!

The recipes are so easy, making it great for a no fuss home-cooked meal.   Just to name a few of her recipes:  On Vacation Dip (yum!), Better than Baked Potatoes (this is a must try ~ I’m wondering how it works), Cabbage Casserole with Alfredo sauce, Tam-Tam Chicken (can’t wait to try this), Southwest Crescents (black beans!) and Doughnut Sundaes (sounds sinful to me and is another one I can’t wait to try!)

You know how aggravating it is to read a recipe out of a cookbook while trying to assemble it and the page suddenly flips over?  Well, that is not the case with My Kind of Cooking.  Its spiral bound and lays flat for easy recipe reading! 

I made her tuna salad.  The mix of ingredients intrigued me and I was flat out amazed!  Oh my gosh!  I will be making it this way from now on! The olives give it zing, the cottage cheese makes it creamy and the Italian dressing ties it all together.  It is good and I mean, REALLY GOOD!  





Here it is:

Italian Tuna Salad

3 tablespoons mayonnaise
3 teaspoons Italian dressing
2 (3 ounce) cans tuna in water, drained
¼ cup cottage cheese
8 green olives, sliced

In medium bowl, combine mayonnaise and dressing.  Mix well.  Add remaining ingredients.  Mix well.
Makes 2 servings.



Bill looked at My Kind of Cooking also and “After Work Stroganoff” caught his attention.  It’s filled with browned ground beef, cream of mushroom soup, sour cream and ketchup. It is easy ~ and fast also when you need a meal ready quickly.  It smelled so good when cooking and it was delicious.  Bill fell for it hook, line and sinker and so did I.  It will be on our dinner table again before too long!






After Work Stroganoff

1 pound ground beef, browned
1 (10-3/4 ounce) can cream of mushroom soup
½ cup milk
½ cup sour cream
¼ cup ketchup

In medium saucepan, combine all ingredients.  Mix well. Cook over low heat 15 minutes, stirring occasionally.  Serve over noodles.
Makes 4 servings.

Sriracha Beef Stir-Fry with Broccoli and Cauliflower




I made this last night and it’s a winner!  Stir fry is always a good option for a quick filling meal and we really liked the combination of the vegetables, beef and sauce in this dish. 

Sriracha Chili Sauce is a little tangier, sweeter and thicker than most hot sauces so adjust the amount to cut down the “heat.”  Freeze the beef for several minutes if it is hard to slice.  Be sure not to overcook the vegetables since they will be simmering in the sauce later with the beef.  Substitute chicken for the beef, that’s good also; add red bell peppers for color and a little more flavor.

This is satisfying and mighty tasty:   much better than take-out and you know exactly what is in it!


Sriracha Beef Stir-Fry with Broccoli and Cauliflower

Ingredients:

2 cups rice
1 pound boneless top sirloin steak or flank steak, cut into thin slices
2 tablespoons red wine vinegar, divided
2 tablespoons low-sodium soy sauce, divided
1 teaspoon sugar
1 cup low-sodium beef broth
1 tablespoon cornstarch
1 tablespoon Sriracha Chili Sauce
2 tablespoons oil, divided
1 tablespoon fresh ginger, grated
3 teaspoons garlic, minced
2 cups cauliflower florets
2 cups broccoli florets
1/3 cup onions, chopped
¼ cup water
Salt and pepper, to taste

Method:

Cook rice according to package directions.
While rice cooks, combine beef with 1 tablespoon red wine vinegar, 1 tablespoon soy sauce and sugar. 
Stir together remaining vinegar and soy sauce with beef broth, cornstarch and Sriracha sauce.
Heat 1 tablespoon oil in a large skillet over medium-high heat.
Add beef mixture; sauté 3 minutes or until browned.
Remove beef from skillet and set aside.
Add remaining oil to skillet.
Add ginger and garlic to pan, cook for 30 seconds, stirring constantly.
Add cauliflower, broccoli, onions and water; cook for 2-3 minutes.
Add beef mixture and broth mixture.
Cook for 2-3 minutes until beef is heated well and sauce is thickened.
Add salt and pepper, if desired.
Serve beef mixture over rice.
4 servings
