BREAD PIZZA & PIZZA CUPS

Ingredients
| Bread slices | 6 |
| Onion | 1 |
| Tomato | 1 |
| Capsicum | 1 |
| Mozerella cheese | To top |
| Tomato/pasta/pizza sauce | 2 tblsp |
| Italian seasoning | 1 – 2 tsp |
| Olive oil | 2 tsp |
| Crushed red pepper | To sprinkle on top |
Method:
- Pre heat oven to 200 deg C.Chop onion,tomato and capsicum to cubes.
- To make pizza cups, cut the bread slices with a lid to a circle. Brush a muffin tray with oil and place these bread circles in it so that to make a cup shape.Spread the tomato/pasta sauce.
- Sprinkle the chopped veggies and cheese on top of it. Sprinkle with the italian seasoning. Do the same procedure for bread pizza, to the bread directly and bake them placing in a baking tray.
- Bake for 7-9 minutes or untill the bread turns golden in colour and crisp too.

CORN ROLLS

I liked this Corn Rolls Recipe when I saw in the cookbook I borrowed from library. The recipe needed ‘cream style corn’,which I was hearing for the first time. Then bought that too and tried immediately … Great snack for kids in the evening.
Ingredients
| Bread slices | 4 |
| Cream style corn | 3/4 cup |
| Onion | 1/2, chopped |
| Garlic | 1, chopped |
| Pepper powder | 1/2 tsp |
| Tomato sauce | 1 tsp |
| Salt | As needed |
| Corn flour | 2 tblsp |
| Sesame seeds | 1 tsp |
| Oil | 1 tblsp |
Method:
- To Prepare the stuffing,Heat a pan with oil and add the chopped garlic. Fry for a minute and add the chopped onions and fry till transparent.Add the cream style corn and mix well.
- Add pepper powder and sauce and fry till you get a thick stuffing.
- Trim the edges of the bread and roll with a rolling pin to make thin squares.
- Prepare a batter with corn flour with 1/4 cup of water.Spoon 2 tsp of the stuffing in the bread .
- Apply the corn flour batter in the sides of the bread.Roll the bread carefully.Seal the sides.
- Give a quick dip in the corn flour batter and sprinkle or roll over the sesame seeds.
- You can deep fry or shallow fry in a pan. Make sure you fry all the sides if you are shallow frying. Fry until crisp.
Serve hot with tomato sauce.

VEGETABLE CUTLETS
An excellent way to make kids eat the vegetables as snack. You can make the pre-preparation and freeze/refrigerate too.So this is a nice idea to use this as birthday party recipe. While making in bulk,its better to deep fry as pan frying will be time consuming.
INGREDIENTS: (Makes 8 pieces as shown in the picture)
| Potato,small | 2 (equivalent to 1 cup mashed) |
| Other mixed veggies | 1/4 cup |
| Bread | 2 slices |
| Garam masala | 1/2 tsp |
| red chilli powder | 1 tsp |
| Coriander leaves,chopped | 3 –4 tblsp |
| Bread crumbs | 1/2 cup |
| Maida | 2 tblsp |
| Salt | As needed |
| Oil | For frying |
Method:
- Pressure cook potato in a vessel and other chopped veggies together in another vessel for three whistles. Just sprinkle a tsp of water in the chopped veggies,that is enough. For potato just cut into 4 and add little water.
- Peel off the skin and mash the potato and add other veggies to it. Make sure there is no water.
- Tear the bread pieces and crumble it by grinding in a mixer.This step can be skipped and you can directly add to the veggies as well. But I prefer this way for even mixing.
- Add it to the veggies along with garam masala,red chilli,salt and coriander leaves and mix together.
- Make a thick paste(like idly dosa batter consistency) out of maida and water.
- Make equal and desired shapes out of the veggies and set a side,I made it simple and round. Dip it in the maida paste one by one.
- Quickly take it out and coat both sides with the bread crumbs. Repeat the process for the rest and arrange in plate.
- If you are pan frying then just drizzle with some oil over a hot non stick pan and arrange 4 at a time and cook in a medium flame both sides,until crisp.
- Enjoy hot with tomato sauce/ketchup with tea/coffee/cool drinks.
