Homemade Pizza

~1 large pizza or 6 small

1 cup warm water
1 T. yeast
2 T. oil
2 T. sugar
1 t. Italian seasoning
1 t. salt
2 1/3 to 3 cups flour
Pizza sauce to taste
Cheddar cheese to taste
Mozzarella cheese to taste
Your choice of toppings

Stir sugar into water, add yeast and proof for 10 minutes. Stir in salt, seasoning and oil. Add about 2 cups flour and mix, forming a small ball. Add flour as needed and knead until smooth and elastic--about 10 minutes. (I put it in my mixer with a dough hook.)

Place dough in a greased bowl and let rise until doubled--about 45 minutes.

Roll it out and top with sauce, cheeses and toppings. It will make 1 normal size pizza or about 6 smaller ones. Bake at 400 degrees for about 20 minutes.

Holly's Note:
My boys like making their own individual pizzas. You can also do calzones instead of pizzas. Bake for about 25-30 minutes.

Pizza, Pizza

1 cup plus 2 T. water (70° to 80°)
2 T. grated Parmesan cheese
2 T. olive oil
1-1/2 t. Italian seasoning
1 t. sugar
1 t. salt
3 cups all-purpose flour
2-1/2 t. active dry yeast
1 T. cornmeal
1 cup meatless spaghetti sauce (I use Ragu)
~4 cups (16 ounces) shredded part-skim mozzarella cheese
toppings of your choice

In a mixer with a dough hook, mix together water, Parmesan, olive oil, Italian seasoning, sugar, salt, flour and yeast.  Mix it for about 7-8 minutes.  Cover the mixer and let the dough rise for about 30 minutes.  Remove from bowl.

Roll into a 14-in. circle. Sprinkle a greased pizza pan with cornmeal. Transfer dough to prepared pan. Spread sauce over the dough, sprinkle with cheese and toppings.

Bake at 400° for 25-30 minutes or until crust is lightly browned. Let stand for 10 minutes before cutting.

Holly's Note:
I found the original recipe in my Simple & Delicious magazine.  As with most things, I modified it!  It made one, cookie sheet size pizza that I thought was a little thick.  I think that I will split the dough into two thinner sized crusts next time.  This was a huge hit with my picky eater.

The original recipe called for mixing the dough in a breadmaker, which you certainly could do. I just mixed it in my kitchen aid with a dough hook.  

Really Easy Pizza for the Kids

1 ½ c. biscuit mix
1/3 c. hot water
Italian seasoning

Mix hot water, biscuit mix and seasoning together. Beat about 20 strokes or just stick it in the mixer. Then, knead about 60 times or until smooth and no longer sticky. Roll it out on a cookie sheet (about 12 inch size). Top with spaghetti sauce, your favorite toppings and cheese. Bake at 450 for 12-16 minutes or until cheese is bubbly.

Holly’s Note:
My boys love this, especially on hurried sports nights or even for lunch. Sometimes I make it into individual ones.

Pizza Stromboli

1 package yeast
3/4 cup warm water (110° to 115°)
4 1/2 t. honey
1 T. nonfat dry milk powder
2 cups white flour
1/2 cup whole wheat flour
2 t. Italian seasoning
1 t. salt
4 1/2 t. pizza sauce
3/4 cup chopped pepperoni
1/2 cup shredded cheddar cheese, divided
1/4 cup shredded Parmesan cheese
1/4 cup shredded mozzarella, divided
2 T. finely chopped onion
1 t. chopped olives
1 t. chopped mushrooms

In a large mixing bowl, dissolve yeast in warm water. Stir in honey and milk powder and until well blended. In a small bowl, combine 1 cup bread flour, wheat flour and seasonings. Add to yeast mixture, beat until smooth. Stir in pizza sauce. Stir in enough remaining bread flour to form a soft dough. Turn onto floured surface and knead until elastic. (6-8 minutes). Place in greased bowl, turning once to grease top, cover and let rise until doubled (about an hour)./

Punch dough down. Turn onto a lightly floured surface. Roll into a 14 x 12 inch rectangle. Sprinkle pepperoni, 1/4 cup cheddar cheese, parmesan cheese, 2 T. mozzarella cheese, onion, olives and mushrooms to within 1/2 inch of edges. Roll up jelly-roll style, starting with a long side, pinch seam to seal and tuck ends under. Place seamed side down on a greased baking sheet. Cover and let rise for 45 minutes.

Sprinkle with remaining cheeses, Bake at 350° for 25-30 minutes.

Holly’s Note:
I make the dough in the bread machine. Rather than going through the whole cycle, I just shut the machine off after it is kneaded, and let it rise in the machine until doubled. Once I roll it out, I treat it like a pizza and use our favorite Ragu, the toppings we like, the cheeses we like (not olives!), and then rolled it up and let it rise, etc.

I used the dough recipe for regular pizza, but we didn’t like it as well as we do the stromboli. This is great for snacking, but is also sells well at bake sales. The original recipe came from a Taste of Home magazine.

Pizza/Calzone Dough

Preheat oven to 425.

1 T. yeast dissolved in 1/2 c. warm water
2 T. sugar
1 c. milk
6 T. oil
1 1/2 t. salt
4+ cups of flour
1 T. Italian seasoning

Dump it all together in a bowl and knead or mix until well mixed. Dough will be sticky.

For Pizza:
Spray a large pizza pan and put dough in the middle of pan, spread out (using flour if necessary). Poke dough with a fork. Immediately bake for 10 minutes. Remove from oven and top as you normally do for pizza: sauce, cheese, toppings. Bake for an additional 10 minutes.

For Calzones:
Makes about 8. Roll them out, stuff them and seal and bake at 375 for 30-35 minutes.
