Guacamole

 Phew! I am back.  My computer was down with the flu.  I should have taken better care when I went out in a hurry searching Google for Manisha Koirala's marriage photographs.  I know! It cannot get any worse, stupid or silly.  No disrespect to actors, since you can see I must like her to be gawking at her pictures, but now on I will think a million times before I go to gawk at pictures online. 

     I hope you will enjoy this refreshing dip as much as I.  Dip into it with some vegetable flavored Ritz crackers or spread it on your fajitas and  Enjoy!



Ingredients:
Avocado                      - 1
Shallots                        - 1 small
Garlic                           - 1 small pod
Thai chili                       - 1, seeded and chopped fine
Olive oil                       - 1 tspn
Black pepper               -  a little to taste
Salt                              - to taste     
 Method:

Cut the avocados and put in a bowl with the rest of the ingredients and mash
Serve with crackers or with rolls.

Chiles Rellenos






Here’s a great Mexican dish that takes some time to make but is worth every minute of it. This is the first time I’ve made chiles rellenos and they turned out really tasty with a little heat so this recipe is a keeper for me.



Poblano chiles are used in the recipe but, Anaheim or ancho (dried poblano) could be used as well.  They are charred and then their skins are removed.  After being coated in a batter, they are stuffed with cheese, fried and then baked.  The chiles are pan-seared instead of deep fried.



While speaking of chile peppers, I came across an interesting and informative book about them:  The Great Chile Book by Mark Miller.  It describes the varieties, regions where they are grown, degrees of hotness (1-10) and includes photos of more than 90 fresh and dried chiles with many recipes.



Back to this recipe ~ it was in “Cooking Light” magazine and I made a couple of changes.  The recipe called for ¼ cup cilantro to be added to the tomato salsa; I don’t care for cilantro so omitted it.  It included reduced-fat Monterey Jack cheese, I used regular because I had that on hand.

I really like the salsa in this dish!  With using medium salsa verde, there is a little heat; if you like more heat, use the hot.  It’s a great recipe and I hope you give it a try if you like chiles rellenos!





Chiles Rellenos
Adapted


Ingredients:
Cooking spray
1¼ cups coarsely chopped onion
2 cups chopped tomatoes
½ cup low-sodium salsa verde
¼ teaspoon salt
4 poblano chiles
1 cup (4-ounces) shredded Monterey Jack cheese, divided
2 tablespoons goat cheese, divided
3 large egg yolks
3 large egg whites
¼ cup flour
¼ teaspoon freshly ground black pepper
3 tablespoons cornmeal
¼ cup canola oil

Method:
Preheat broiler to high.
Coat a large skillet with cooking spray and heat over medium
high heat.
Add onion, sauté 4 minutes.
Stir in chopped tomatoes, salsa verde and ¼ teaspoon salt.
Cook 15 minutes or until thickened, stirring frequently.
Place tomato mixture in food processor and process until
smooth.  Set aside.
Place poblanos on a foil-lined baking sheet.
Broil 3 inches from heat for 8 minutes or until blackened and
charred, turning after 6 minutes.
Place in a paper bag; fold to close tightly.
Let stand 15 minutes.

Peel and discard skins.
Cut a lengthwise slit in each chile; discard seeds, leaving
stems intact.
Spoon ¼ cup Jack cheese and 1½ teaspoons goat cheese in
cavity of each chile.

Preheat oven to 350 degrees.

Lightly beat egg yolks in a small bowl.
Place egg whites in a medium bowl; beat with a mixer at high
speed until stiff peaks form.
Fold egg yolks into egg whites.
Combine flour and black pepper in a shallow dish.
Place cornmeal in another shallow dish.
Dredge poblanos in flour mixture, and dip into egg mixture.
Dredge in cornmeal.

Heat oil in a large skillet over medium-high heat until hot;
reduce to medium heat.
Add coated poblanos to oil.
Cook 6 minutes or until crisp, turning to cook on all sides.
Place chiles on a baking sheet and bake at 350 degrees for 8
minutes or until cheese melts.
Serve with salsa.

Mojo de Ajo





I am hooked on this stuff! 



A while back, I was watching “Mexico – One Plate at a Time” on PBS when Chef Rick Bayless of Frontera Grill in Chicago, along with his daughter, made Mojo de Ajo.  The title of the show was “Liquid Gold” and believe me, it is!



 If you are crazy about garlic infused olive oil and haven’t made it yourself, now is the time!  This is soooo good!  Rick says that he always has a jar of it in the refrigerator and from now on I will also.  It can be used to sauté about any meat, vegetables, pasta dishes or even on pizza.



Mojo de Ajo (garlic sauce) keeps in the refrigerator for 3 months.  It is easy to make and definitely worth its weight in gold.  Here are some suggestions for using it:



  • Dipping sauce for bread.
  • Spread over pizza crust and top with shredded mozzarella cheese.
  • A brushetta topping.
  • Add it to soups.
  • Toasted French bread.
  • Brown a roast in it.
  • Add it to salad dressings.
  • Over most meats:  steak, chicken, pork.
  • With vegetables:  roast potatoes slathered with mojo de ajo.
  • Add it to pasta sauces.
  • With fish and seafood, such as shrimp scampi.
  • Marinades.
  • On popcorn!



You can use it for practically anything.  If you really like garlic the way I do, you have got to try this!  In Rick’s words:  “take it out of refrigerate and enjoy some deliciousness.” 







Mojo de Ajo

Garlic Mojo

Ingredients:

4 large heads garlic

     OR 10 ounces (about 1¾ cups) peeled garlic cloves

2 cups fruity olive oil

1 teaspoon salt

½ cup lime juice

Method:

Heat oven to 325 degrees.

Break the heads of garlic apart, then mash each clove (a fist against the side of a knife is what I do) to release the clove from its paper skin.



If using already-peeled garlic, scoop the cloves into a heavy recloseable plastic bag and use a rolling pin to mash them slightly.



Stir together the garlic, oil and salt in an 8x8-inch pan (make sure the garlic is submerged).



Slide it into the oven and bake until the garlic is soft and lightly brown, about 45 to 55 minutes.  (Mine browned in 40 minutes.)



Add the lime juice and return to the oven for 20 minutes for the garlic to absorb the lime and turn golden brown.



Using an old-fashioned potato masher or large fork, mash the garlic into a coarse puree.



Pour the mixture into a wide-mouth storage container and refrigerate it until you’re ready to use it.



This mojo will keep for up to 3 months in the refrigerator as long as there’s enough oil to keep the garlic covered.



Makes about 3 cups

Homemade Tortillas & Indianized Wraps

Its has been a dream for me to make out home made tortillas instead of buying often the store bought tortillas..This time, i brownsed through many sites and finally my choice went for this version..If u r planning to make out tortillas at home definitely u need for simple ingredients like all purpose flour, baking powder,butter,salt and warm water..Whoever roll prefectly their rotis will get a prefect tortillas as this tortillas ressembles quite like our rotis..Its really worth to try and this home made tortillas can be frozen in a ziplock bags for upto several months..These tortillas are tasty,light, soft and fabulous..I have prepared these light tortillas and served along with Capsicum & Tofu Zunka for our dinner, everyone at home enjoyed this capsicum & tofu zunka wraps for our dinner with simple salad, definitely a healthy and complete dinner..


2cups All purpose flour
1tsp Baking powder
3tbsp Butter (room temperature)
Salt
Warm water

Combine the flour, salt, baking powder in a large bowl, add the butter and warm water to the flour and knead as a soft dough..cover the bowl with a towel and leave aside for 15minutes,divide the dough into 12-13 golf sized balls..roll each dough on a floured surface to form a very thin circles..heat a non stick pan, add the rolled tortillas and cook on both sides until the surface starts to bubble ..Turn the torilla and cook both sides until the tortillas turns slightly brown or half cooked...repeat the same process, until the dough get finished..Arrange the cooked tortillas in a ziplock bags and stor them either in fridge or in freezer...

Indianized Wraps:




Heat the already prepared home made tortillas on both side until they get cooked, arrange few spoons of Capsicum & Tofu Zunka in the center of the tortillas and roll them as wrap, pick the edge with a toothpick and serve immediately with salad or with french fries..

MMMarvelous Coconut Margarita for Cinco de Mayo and a Happy Birthday!






I don’t know about you but Cinco de Mayo means time for my favorite cocktail.

Restaurants around here have a long list of margaritas.  There are different tequilas and different mixers all ending up in a zingy cocktail.  It’s the perfect drink for summer, festivals, parties, happy hour and Cinco de Mayo.





Cinco de Mayo not only commemorates the Mexican Army’s victory over French forces at the Battle of Puebla on May 5, 1862, it is also the 6th birthday of our two cats, Minnie and Moocher! 

We adopted them from a rescue shelter when they were 6 weeks old.  Minnie is feisty with a mind of her own and Moocher is laid-back and affectionate, contrary to what some people in this family think; you know who you are!

This is not the same old margarita ~ the ones with strawberry, lime or banana.  This margarita is shaken up a bit with the subtle taste of coconut. 

Minnie and Moocher will be diving into a can of tuna while I enjoy a Coconut Margarita.  Here’s the recipe:

Coconut Margarita

Ingredients:

4 cups ice
4 teaspoons Coco Lopez, Cream of Coconut
8 ounces pineapple juice
4 ounces tequila
8 ounces Sweet & Sour mix
2 ounces Triple Sec or other orange liqueur
Lime wedges
Sugar or toasted coconut

Method:


Place ice in blender and add remaining ingredients except for lime wedges ans sugar. 
Blend until slushy.
Add more ice for a thicker margarita.
Rub rims of glasses with lime wedges.
Dip rims in sugar or toasted coconut
Pour margaritas.
Sip and enjoy!
Makes about 4 margaritas.

Mom’s Penuche


Merry Christmas Everybody!



Say it with me, “Peh-noo-chee.”  Or, do you call it brown sugar fudge?  Mom always called it penuche but, some people call it brown sugar fudge and that describes it spot on.   It is either a New England or a Southern delicacy and the origin of it is unclear.

This is an old recipe that Mom used during the holidays when I was young and it is undoubtedly one of the sweetest confections you will ever put in your mouth!  Penuche is a form of fudge, except that it does not include chocolate and is lighter in color than fudge while being extremely sweet.  Penuche tastes like a very rich caramel.  You make it by heating sugar and milk to the soft ball stage, letting it cool briefly, and then beating it until it is smooth and creamy.  Mom usually added chopped nuts walnuts but, that is optional.

Then, you get to the “workout” segment of it when you have to beat it!  It has to be beaten vigorously and it will make your arm feel like it is going to disintegrate but, you have to persevere!  Better yet, have someone handy to be your back-up and take turns at it.  It will definitely build those biceps up!

Penuche has an intense brown sugar buttery taste that is very dangerously addicting!  It would make a great home-made Christmas gift if you and your family don’t devour it first!  There is nothing else quite like it!



Mom’s Penuche

Ingredients:

3 cups light brown sugar, firmly packed
¼ cup light corn syrup
¾ cup milk
¼ teaspoon salt
2 tablespoons butter
½ cup walnuts or pecans chopped, optional

Mix all of the above together in a deep heavy sauce pan.  Using a candy thermometer, cook to 238 degrees.
Cool to 110 degrees.
Add vanilla.
Beat until stiff and mixture begins to gloss, about 10 minutes or more.
Very quickly stir in the nuts.
Pour into buttered 9” pan.
Cut into squares when firm.


Penuche is the perfect remedy for your sweet tooth! 

It will make you drool!!!

Easy Enchilada Casserole


I’m sure there are many versions of this recipe out there in the “www” for this dish; in fact Bubba himself has a great recipe for it; but, this time I wanted a biting amalgamation of ingredients. 





This enchilada casserole includes a good dose of chili powder and cayenne pepper added to the meat for that spicy Mexican flavor; the velvety texture of black beans and plenty of melted cheese to top it off. 

If you like enchiladas but aren’t thrilled with making your own, my easy one-dish casserole would make a great meal for your family and friends.  There is definitely enough to feed several people!




Easy Enchilada Casserole

Ingredients:

2 pounds ground beef
1 large onion, chopped
1 tablespoon garlic powder
2 tablespoons chili powder
1 teaspoon cayenne pepper
1 dozen flour tortillas
1 pound grated sharp cheddar cheese, divided
1 (15 ounce) can black beans, rinsed and drained
½ cup chopped green olives
1 can cream of mushroom soup
1 can cream of tomato soup
2 (4 ounces) can diced green chiles
1 (10 ounces) jar enchilada sauce
1 tablespoon lime juice

Sour cream, for garnish if desired
Black olives, sliced for garnish if desired

Method:

Place ground beef and onion in a large skillet on medium heat and cook until beef is done.
Add garlic and chili powders and cayenne pepper.
Cut tortillas into quarters.
In a large bowl, combine 1 cup of cheddar cheese and remaining ingredients.
Add ground beef mixture and mix well.
In a large casserole dish coated with cooking spray, arrange a layer of tortillas.
Spoon a layer of meat mixture over tortillas.
Repeat layers twice, ending with meat as last layer.
Top with remaining cheddar cheese.
Bake at 350 degrees for 45 minutes to one hour.
Garnish with black olives and sour cream.
Serves 6-8

Mexicali Hamburger Bake

I’m hooked every time I see the word “cornbread!” 



This recipe combines one of the great flavors of the South ~ cornbread ~ with spicy Mexican flavors.  It’s exactly like having salsa with your cornbread and meat. 

I came across this in my Better Homes and Gardens Cookbook and couldn’t wait to try this homey quick recipe.  It’s a zippy ground beef dish with the added goodness of tomatoes, corn and cheese.  Covering it all is a smooth layer of corn bread. 

If you like cornbread and Mexican food, you’ll like this spicy dish!






Mexicali Hamburger Bake

Ingredients:

1½ pounds ground beef
2 tablespoons chili powder
1 tablespoon garlic powder
½ teaspoon salt
½ teaspoon pepper
1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
1 cup frozen whole kernel corn, thawed
1 cup shredded Mexican-style cheese, plus 3 tablespoons for topping


For corn bread topping:

½ cup yellow cornmeal
½ cup flour
1¼ teaspoons baking powder
1 tablespoon sugar
½ teaspoon salt
1 egg, lightly beaten
2/3 cup milk
2 tablespoons vegetable oil
3 tablespoons Mexican-style cheese

For olive topping:

¼ cup each of sliced green olives, black olives and pimentos.

Method:

Preheat oven to 350 degrees.
Add beef to a very large skillet.
Season with chili and garlic powders, salt and pepper.
Sauté beef until brown; drain off fat.
Stir in undrained tomatoes and corn; heat through.
Transfer to a greased 2-quart baking dish.

In a medium bow, combine cornmeal, flour, baking powder, sugar and salt.
Stir in egg, milk and oil.
Spread evenly on beef mixture.
Sprinkle with remaining 3 tablespoons cheese.
Bake, uncovered about 30-35 minutes or until topping is set.
Let stand for 5 minutes.
Scatter olive mixture over top.
6 servings

Chicken Tacos

Do you like Mexican cuisine? How about a delicious meal that can be put together in less than an hour? Now, I am sure I have your full attention. Who after all can say no to less time in the kitchen, and yet tasty food on the table! Thriving fast food joints everywhere are a sure proof to this fact.

I am no different! Once I found out that tacos put together at home can hold it’s own to tacos from my favorite joint, there was no stopping me. With fresh ingredients, and chicken that is cooked at home this recipe is healthier. More over, children love this stuff and indulge and for once you don’t have to curtail them from having an extra bite or two.

And now, with cricket being my latest distraction, I am thinking it won’t be a bad idea to have some tacos while enjoying the game too. Please agree with me!

Chicken Tacos



Ingredients:

Taco shells- 12

Chicken breast- 1 lbs, cut into bite size pieces
Pepper- 1 tsp
Salt
Olive oil- 1 tbsp
Lemon juice- 1 tsp
Garlic powder- 2 tsp
Jalapenos finely chopped- 1/2/to your taste
Chicken stock- 1 cup

Bell pepper julienne- 1/4 cup
Lettuce finely chopped- 1/4 cup
Guacamole- from 2 avocados(find the recipe here)
Mexican cheese- 1/2 cup (A Mixture of Monterey Jack, Mild Cheddar, Queso Quesadilla and Asadero cheese)
Sour cream- 1/4cup (optional)
Salsa/chopped tomatoes- 1/4 cup

Method:

1.Marinate the chicken with pepper, oil,salt,lemon juice and garlic powder and keep aside for at least 15 minutes.
2.Boil the stock and add the marinated chicken into it.
3.After 3-4 minutes add the jalapeno slices and continue cooking till chicken is almost done.
4.Increase the heat and cook till all the water is absorbed.
5.Switch off when there is still a little water left, just enough to moisten the chicken.
6.Prepare the shells according to package instructions.
7.Fill them with cooked chicken,sour cream,salsa and veggies sprinkle the cheese over.
8.Place them on a baking sheet/microwave safe plate and warm in an oven at 400 degree F/on high in a microwave for 30-45 seconds, till the cheese is melted.
9.Serve with guacamole and some Mexican cumin rice or as it is.

Aunt Lucy’s Mexican Corn Pudding

Aunt Lucy, 1978


Aunt Lucy was Dad’s sister.  They were born on the same day, March 20th, 5 years apart; she in 1906 and Dad in 1911.  Incidentally, in 30 days, on March 20th, our younger son, Matt, will be getting married to Kathy!

Here’s a little background on Aunt Lucy:  She was married and divorced before I was born and had a daughter, Polly, who died when she was around 4 or 5 years old from scarlet fever, I believe.  She never married again and I doubt if she ever even had a boy friend after that.  Her husband was connected with Rural Electric in Lancaster, Ohio when electric ranges were becoming the vogue.  Aunt Lucy gave cooking demonstrations and explained the operating procedures of the stoves.  It was an amazing time according to her.

Anyway, it was no secret that Aunt Lucy was afraid of her own shadow!  One time, years ago, right after we moved here to Cary and went back to visit Mom and Dad in Baltimore, Ohio, we called Aunt Lucy to invite her over for the day and dinner.  She was probably in her late 70’s then and loved to be around when we were there.  Anyway, I called to invite her and told her that we would pick her up.  She said, “Oh, I would love to but I can’t because it’s raining hard.”  Dumbfounded, I told her that we would be picking her up, she didn’t have to worry about the rain.  There was no coaxing her!  Her life centered on what the weather forecast was for the day!!!

Waaaay back when I was very young and still lived in Picktown (Pickerington, Ohio) and visited Aunt Lucy in Columbus, I was never quite sure what to expect and thought of it as kind of an adventure.  I knew I had to be very mannerly and would be watched like a hawk and protected like a gem! 

Without fail, when I jumped into her car, she insisted that I scoot over; right beside her when she drove.  I was told in no uncertain terms, not to touch the car door, much less lean against it as we very slowly cruised the roads.  While driving, she would check the mirror countless times to make sure her lipstick was still bright red and not escaping the lines of her mouth and that every hair was in place.

But, that was just Aunt Lucy!  She was truly great!  We had many good times together!  She instilled her love of music (and Dad also with music!), genealogy and reading in me.  I loved her dearly and she doted on me. She was definitely no Lucy Ricardo though!

This Mexican Corn Pudding is one of the very few recipes of hers that I have.  It is really very good and is a perfect comfort food.  Give it a try!

Aunt Lucy’s Mexican Corn Pudding

Ingredients:

1 cup yellow corn meal
½ cup oil
2 eggs
1 cup buttermilk
½ teaspoon salt
½ teaspoon baking soda
1 small can green chilies
2 cans creamed corn
1 medium onion, sliced
1 green bell pepper, chopped
½ cup Parmesan cheese

Method:

Mix all ingredients together, except for the peppers and cheese.
Pour one-half of the mixture into a 9” skillet.
Sprinkle cheese and peppers over top.
Add rest of mixture.
Add remaining cheese and peppers.
Bake at 350 degrees for 45 minutes.

Coleslaw(Raw Cabbage Salad) Tortilla Wrap

Coleslaw is a salad prepared mainly with shredded raw cabbage and shredded carrots, its really quite easy ,quick and delicious salad can be prepared within few minutes and prefect salad for a quick lunch or dinner..Many veggies like red cabbage, onions, cheese, pineapple or apples can be added to this raw cabbage salad and the dressing traditionally consists of vegetable oil or vinger ,mayonnaise or yogurt instead of mayonnaise with  salt..Coleslaw is generally eaten as side dish with barbecue, french fries and with fried chicken, its also used as sandwich ingredients , placed on hamburgers, barbecue sandwiches or with hot dog..Our today's lunch menu goes for this simple coleslaw salad which i turned as wrap with yellow corn tortillas and served with sesame chicken strips (stay tuned will be posting soon)..We enjoyed having this crunchy,delicious and filling wraps with simple pineapple salad..Am sending this coleslaw tortilla wrap to RV's & Sudeshna's  Food For 7Stages Of Life-Healthy Fast Foods, Pj's No Cook Event and finally to Divya's Show Me Your Salad...


1cup Shredded cabbage
1/2cup Carrot (shredded)
2tsp Mayonnaise
1tsp Vinegar
Salt
1/2tsp Sugar

Mix the mayonnaise, vinegar, salt and sugar in a small bowl and keep aside..take the shredded cabbage, shredded carrot in a bowl and add the already prepared dressing, add salt if need and arrange in fridge for an hour..


For Tortilla Wrap:
4nos Yellow corn tortillas
Tomato ketchup (as per need)
Pepper powder

Heat the tortillas in microwave oven for 3minutes,arrange enough coleslaw over the tortillas, spread the ketchup and springle the pepper powder over the coleslaw and make a wrap by folding the tortillas gently..serve immediately with french fries..

Super fast food na!!


Tortilla Soup

I have always loved soup and still do. It surprises me that I have not posted more recipes for soup on the blog.

I suppose, the love started with the simple gruel and green grams that was a customary dinner at home while growing up. Thereafter, the Chinese food outlets that spawn our cities made sweet corn chicken soup and manchow soup household names. But I never tried as many variations of soup as I have since I came to the U.S.

Tortilla Soup

Coming to the U.S. opened a whole new world of soup to me. Hamburger soup at my friend Janet’s palce, Kale and bean soup at Marilyn’s,are just a few to mention. Today’s recipe is from dear a friend Barbara. Her cooking is superlative, and dinners at her place and socializing are some of my fondest memories from the last couple of years. She cooks everything to perfection. The spices and flavors are always the right amount to keep you wanting more.

With bay leaf, cumin and coriander leaf to flavor this soup it is very close to Indian cooking. I hope you will enjoy this soup as much as I do.

Tortilla Soup

Ingredients:

Chicken Breast - 3 - 4 large
Garlic Cloves - 4
white shoepeg corn - 1 10oz. can I sometimes put two cans]
Diced tomatoes - 1 10oz. can mild green chiles
Cumin - 1-2 tsp.
Bay leaf - 1
Black pepper - ½ t
white shoepeg corn - 1 10oz. can
diced tomatoes with mild green chiles - 1 10oz. can of

To sauté:
Olive oil - 2 Tablespoon
Onion - 1 large
Garlic Cloves - 4
Cilantro chopped - 6-8 branches

Method:

1. Boil Chicken breasts for 30 minutes in sufficient water to have about 2 qts of broth left (I boiled it in 9 cups of water) with 3-4 large cloves of garlic, salt and pepper to taste.
2. When chicken is done, remove from broth, cool slightly and cut and shred into small pieces. Return to broth.

3. In small skillet with 2 T. olive oil sauté:
4-6 large cloves of garlic chopped finely
1 large onion, chopped
6-8 branches of cilantro chopped

4. Add to chicken and broth.

Add:
1 10oz. can of white shoepeg corn [I sometimes put two cans]
1 10oz. can of diced tomatoes with mild green chiles [I prefer to blend the tomatoes completely before adding.]
[You may also add 1 can V-8 juice if you prefer more tomato flavor.]
1-2 tsp. Cumin
1 bay leaf
½ t. black pepper [or more to taste.] Also check for salt to taste.

Simmer mixture for about 30 minutes more.

Serving Suggestions:

Serve in large bowls with
--Shredded Monterrey Jack Cheese
--Chopped Avocado [To keep avocado from turning brown, place one of the avocado stones in the serving bowl with chopped avocado until time to serve.]
--Lime slices to squeeze on top
--Frito tortilla chips OR cut 3-4 corn tortillas into thin shreds and fry them in oil until crisp. Drain well.
