VEGETABLE SPRING ROLLS, CARROT JUICE
This is also one of the thing I learnt from my SIL here in Singapore. This is the first snack I learnt to make of my own,that too a different cuisine,when I came newly to Singapore. I proudly make this when our relatives visit us… Very simple to make starter and can make pre preparations and do in a jiffy after the guest comes. All you need is patience and free time!!
Ingredients:
For stuffing:
| Cabbage&carrot,finely chopped | 2 cups |
| Pepper (black/white) | 1 tsp |
| Soya sauce | 1/2 tsp |
| Salt | As needed |
| Olive oil | 2 tsp |
And Spring roll pastry sheets,ready made.
And a teaspoon of maida/all purpose flour for sealing purpose.
Method:
- Heat a pan with olive oil and add the carrots first and fry for a minute.
- Then add the cabbage and fry for one more minute in high flame.
- Add the soy sauce,salt and pepper powder and fry in medium flame for one more minute. or until the cabbage is just done. Retain its crunchiness don’t over cook to make it soggy.
- That’s all,our stuffing is ready.
To make the spring roll:
- As per the instructions given in the cover of the pastry sheets,thaw the pastry sheets(keep out for 45 mins). Cover with a wet kitchen towel to avoid drying.
- Take one sheet carefully and keep as shown in the picture.
- Keep the stuffing a little above one corner.
- Take that corner and roll in such a way to cover the stuffing until half way.Make a paste of maida with little water and use that to line the corners of the pastry sheets as shown in the picture.
- Roll till half way as shown.
- Fold the corners both the sides towards the centre shown in the picture.
- Again roll tightly to make it completely sealed.
- Repeat the process to finish the stuffing. Keep covered until cooking,to avoid drying.
- We can either deep fry or shallow fry these spring rolls. I just used 2 tsps of olive oil to fry in a shallow pan.
- Taste wise no compromise,so you can try this way. Fry carefully in medium flame with constant turning over to ensure even cooking and avoid burning!
CARROT JUICE

’ in Sharmis blog, I decided to give it a try for myself and my kid. Today I tried it and it tasted awesome. I made without lemon for my kid as he is allergic to citrus and made with lemon for me. It was so refreshing and I am so happy that I consumed carrot,a veggie I hate the most.

| Carrots | 2 nos. |
| Ginger | a small piece |
| Lemon juice | from half of a lemon |
| Sugar or honey | 2 tsp |
| Salt | A pinch |
| Water | As needed |

Method:
- Chop the carrots after cleaning them and the ginger as well.
- Grind them in the juicer jar with enough water.
- Strain it using a double strainer or a tea strainer(cloth).Squeeze the lemon and add sugar,mix well.
- Enjoy as such or chilled.

KOTHAMALLI THANNI/CORIANDER SEEDS TEA
This tea has medicinal values,my mom makes this now and then …and we like this very much.Especially when we have cold,this one soothes our throat and its very appetizing too…Also sometimes we feel pitham too much in our body and have drowsiness,vomiting sensation in empty stomach. This tea helps a lot for this problem.
Ingredients:
| Coriander seeds/Vara kothamalli/Daniya | 3 tblsp |
| Palm sugar or palm sugar crystals(pana vellam/karuppati or panag kalkandu) | 1 tblsp |
| Honey | 1 tsp |
| Lemon juice | 1 tsp |
| Ginger | 1 inch piece |
Method:
- Grind coriander seeds in mixer coarsely.
- Boil 2 cups of water and add the powdered coriander,crushed ginger,palm sugar crystals( I dint add,I added jaggery instead) and boil till 2 cups of water gets reduced to 1 cup.
- Strain to serving cup and squeeze the lemon and mix in the honey.
- Enjoy hot!! You can replace lemon with 2-3 tblsp of milk too !

PINA COLADA

I have had this cocktail two,three times and I just love this.The original recipe has white rum in it. Of course this is my Virgin version and we have the same(virgin pinacolada) in restaurants too . This cocktail has an awesome taste with the combination of pineapple and coconut flavor. And I know I have not done justice to the picture,I should have presented in a goblet rather than this ordinary glass…Hope you all will bear with me.
Ingredients: (Given here for 1 serving)
| Pineapple juice,fresh | 3 parts (1/2 cup) |
| Coconut cream /thick coconut milk | 1 part( approx. 2 & 1/2 or 3 tblsp) |
| Crushed ice | As needed |
| Soda water(Optional) | 1 part (1/4 cup) |
| Sugar | 4 – 6 tsp (as needed) |
Method:
- Blend everything in a mixer using Juice/inch/pulse option,till all gets mixed well.
- Serve immediately cold in chilled glass/goblet…
I used ready made coconut milk powder available in stores,you can use coconut cream available in stores too,also can add fresh coconut milk.
YELLOW WATERMELON JUICE

Ingredients
| Yellow water melon | Quarter of a fruit |
| Lemon juice(optional) | From half of a lemon |
| Honey/sugar | 2-3 tsp |
Method:
- Deseed the melon and scoop the flesh and blend it along with sugar/honey and mix lemon juice in it. If you want clear,strain it through a metal strainer.
Add ice cubes and enjoy!
PANEER PAKORA & TOMATO JUICE

I never made this until I tried this at restaurants… They give softest paneer pakoras…When we want to quench our sudden craving for North Indian food,we go to a ‘walk-able’ restaurant near by- Mumtaz Mahal at Downtown east. My kids favourite is always Gobi Manchurian there. So we order that for him and for ourselves we order either Paneer Pakoras or Paneer tikka . My hubby though he doest like paneer in gravies, he loves starters using paneer…
The recipe is very simple,with simple ingredients,if you have paneer block in your freezer. Perfect and easy starter idea when you host some guests for dinner…
Ingredients:
| Paneer | 10 – 12 small square slices |
| Gram flour/kadala maavu | 1/2 cup |
| Rice flour | 1/4 cup |
| Corn flour (optional) | 1 tsp |
| Red chilli powder/pepper powder | 1 tsp |
| Ghee | 1 or 2 tsp |
| Oil | For deep frying |
| Chaat masala | For sprinkling on top |
Method:
- Mix both flours with water required to a thick paste,along with salt,pepper powder and ghee.

- Thaw the paneer till soft(keep out in room temperature for 2-3 hours or so).Slice it with knife carefully ,not too thick as well as not too thin, to desired shape(square/rectangle/triangle)

- Heat oil in a deep frying pan and dip the paneer pieces to coat the paneer well in the batter and deep fry them both sides until crisp and golden brown.

Sprinkle chaat masala on top and enjoy hot with green chutney or any sauce.

TOMATO JUICE
This is one of the very few juices my mom makes in my childhood… What I love in this is the elachi flavour in it! Simple and delicious to indulge…
Ingredients
| Tomatoes | 3 |
| Sugar or honey | 1 tblsp |
| Elachi | 1 |
| Ice cubes | As needed |
Method:
- If you dont want the skin then boil water and drop in the tomatoes in it. Put off the flame and let the tomatoes be in the hot water for 2 minutes. Make sure the tomatoes are immersed completely.Take out and peel the skin of the tomatoes.


- Roughly chop the tomatoes and blend it well with elachi,sugar until smooth and serve cold with added ice cubes…
