Easy Lemon Drop Cookies Recipe
in Bars and Cookies on Thursday, March 15, 2012

My great auntie loves lemon flavored baked goods. She loves it when I make lemon cake, lemon cookies, lemon pudding, etc. This is a recipe she gave to me about 20 years ago that I still enjoy making today.
Lemon Drop Cookies
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 cup shortening
1 teaspoon lemon rind, finely grated
2 tablespoons of lemon juice
2 eggs
1 cup granulated sugar
In a Tupperware Thatsa Bowl, combine all of the above ingredients in the order given in the recipe. The batter will be quite stiff. Preheat your oven to 350 degrees. Line your cookie sheet with the Tupperware Silicone Nonstick Baking Mat. Drop batter by the rounded tablespoon onto the cookie sheet. Bake for 10-12 minutes or until done. Store cookies in an airtight container or cookie canister.
