Green beans with Tomatoes




One evening, while the Tilapia was in the oven baking, I was trying to come up with a fast vegetable to serve with it.  I opened the kitchen cabinet and stared at cans of vegetables; corn, green beans, beets, tomatoes, peas and really wasn’t in the mood for any of them.  But then, in one of my rare creative moments, I wondered if mixing green beans and tomatoes together would work; it’s worth a try, I thought! 

So I opened both cans and put them together in a saucepan and let them cook for a while.  I was surprised and so was Bill!  It is a great combination and something easy to fix for a side dish.  Plus, it has a good presentation with the colors, especially the tomatoes.  And now, with canned tomatoes having a wide of added ingredients such as onion, garlic, jalapenos, basil, oregano and green chilies, the combinations are endless.

Although it is good with canned vegetables, in the summer it is great when you use fresh home grown tomatoes and green beans!  Then just throw in whatever seasonings you like ~ salt, pepper, dried oregano or basil, garlic, chives or how about even a little bacon grease?  You know, the flavor of bacon never hurt a thing!  Or to eliminate the grease, just add bacon bits.  I will be trying that myself.

Anyway, it just might be something you want to try, so go for it and open those cans tonight and see just how delicious this is!

Green Beans with Tomatoes 

Ingredients:  

1 (14.5 ounce) can green beans
1 (14.5 ounce) can Del Monte tomatoes with basil, garlic and oregano

Method: 

Place the tomatoes (including sauce) in a saucepan.
Drain green beans well.  Add to tomatoes.
Use more seasonings, if desired.
Let simmer for a few minutes.
Place in serving dish and serve.
