Mixes

I love making your own mixes. My friend, Marne, posted some great info about making your own mixes. Thanks Marne!

Check out these links. I can't wait to try some of them:

Onion Soup Mix

Printable Recipe

3/4 c. dried onion
1/3 c. beef bouillon
1/4 t. celery salt
1/4 t. sugar
4 T. onion powder

Mix everything together and then toss it into the blender for a minute so that it is finely minced. The original recipe didn't call for the blender part. That's my addition. Store in a sealed container. 5 Tablespoons of mix equals 1 package of soup mix.

Holly's Note:
For my Meatball and Stew soup base recipes, I prefer packaged onion soup mix. However, this is great for using it to season the hamburger in meatballs or just adding it to a recipe. I mix this into my hamburgers before we BBQ.

Homemade Brown Sugar

Printable Recipe

1 c. white granulated sugar
2 T. molasses

Mix together with a fork.  A food processor would work well, but I don't have one of those.  I actually just tossed it all in my mixer with a whisk attachment.

Holly's Note:
Several recipes I saw said to use 1 Tablespoon of molasses for light brown sugar and 2 Tablespoons of molasses for dark.  I used 2 Tablespoons of molasses and about 1 1/2 cups white sugar to get a beautiful golden brown sugar.

I don't know that this would be cheaper than brown sugar, especially if it is on sale, but it was certainly a convenient recipe to have on hand the day I needed brown sugar and couldn't get to the store.

Taco Seasoning Mix

Printable Recipe

2 t. salt
2 T. chili powder
2 T. paprika
2 T. flour
1 t. garlic powder
1 t. cumin
1/2 t. oregano

Mix together and store in a container. Use 2 Tablespoons to 1 cup of water for each pound of hamburger if you're doing tacos.

Holly's Note:
I haven't purchased regular taco seasoning since I found this recipe. I love that I can use more or less, depending on the recipe and our tastes.

Italian Seasoning Dip...Carrabba's Style

Printable Recipe

1 T. crushed red pepper
1/2 T. black pepper
1 T. dried oregano
1 T. dried rosemary, crushed
1 T. dried basil
1 T. dried parsley
1/2 T. garlic powder
1/2 T. garlic, minced
1/2 t. sugar
1/2 t. salt

Stir/grind it all together and put ~1-2 tablespoons on a shallow plate. Drizzle extra virgin olive oil over and mix it together. Dip warm French Bread into it and enjoy.

Holly's Note:
This is a work in progress. I've found several listings for this recipe online and I've since modified it. The original recipe was too heavy on the garlic and pepper, so I halved both and added a bit of sugar, which really finishes it. I will probably continue to tweak this, as I'm sure you will if you try it. It also needs a full-bodied, extra virgin olive oil, not a light one.

Ever since I discovered Carrabba's restaurant, I have been trying to duplicate the herb seasoning they use with olive oil and warm french bread. I would always ask the server what was in it, and then try and remember all the ingredients. Now that my local Carrabba's has closed, we can at least enjoy the seasoning/oil mix at home. If anyone can duplicate their Marsala sauce, please let me know!
