Pinacolada
Kerala, Onam and off I go to Puerto Rico. Yes, Pinacolada was apparently concocted by a bartender named Ramon Marrero in Puerto Rico. Coco Lopez( cream of coconut) mixed with rum, pineapple juice and ice. Cool and smooth it glides down, you will agree. Sit out on your deck, sip at a glass and wish real hard. Who knows, it may even take you to a beach in Hawaii, just, maybe! No harm dreaming, right? :)
My husband is the inspiration for me to try cocktails. Since the time I started blogging he has been persistently forwarding cocktail petitions. I am only glad to indulge. The bright colors and the chill drink is fun and easy to make.

Ingredients:
Unsweetened Pineapple Juice- 6 ounces
Coconut cream- 2 ounce
Heavy Cream - 1 ounce
Light rum- 2 ounce
Crushed ice- 1 cup
Method:
1.Blend everything together in a blender.
2.Garnish with a pineapple wedge and serve.
Notes:
1.You could reduce the amount of pineapple juice a bit,if you wish.
2.This gives you 2 servings.
3.You could also use a shaker to mix up everything.
4.The original recipe calls for Coco Lopez,the cream of coconut.

Rum Pecan Pie
Pecans are native to America and the only major nut tree that grows naturally in North America . Spanish colonists are attributed with having the first known cultivated pecan tree planting in the late 1600’s in New York . By the late 1700’s, it was planted in gardens reaching down to the Gulf of Mexico .
The French created many pecan confections after settling in New Orleans , such as: pralines, fudge, breads, sauces; all kinds of desserts and candies but, the most delicious of all is the pecan pie. It is one of my favorite pies, moist and rich with a buttery pecan taste. This recipe is not overly sweet. It is the perfect dessert at holiday time and I’m “nuts” about pecan pie! Are you?
Rum Pecan Pie
Ingredients:
1 9 inch pie shell, unbaked
3 eggs
1 c. sugar
2/3 c. Karo syrup
2 T. melted butter
1 t. vanilla
¼ t. salt
2 T. dark rum
1 ½ pecan halves
6 whole pecans
Preheat oven to 325 degrees.
In a glass mixing bowl, blend the sugar, Karo syrup, butter, vanilla, salt, rum and pecans. Stir well.
Pour into unbaked pie shell.
Arrange one whole pecan in the center and five remaining ones around it in a circle.
Bake for 40-45 minutes, until knife comes out clean.
Cool on a wire rack.
Serve with whipped cream or a scoop of vanilla ice cream.
DELICIOUS!
Best Baked Apples
Ahhh! If you could have only smelled these apples as they were baking! The aroma filled the house with the ultimate cinnamon potpourri!
I love it when apples can be turned into a sweet treat other than the usual pies and cakes. For these mouthwatering apples, just core the apples; add some cinnamon, chopped nuts and dried fruit that have been soaked in rum, and bake for an incredible treat.
The rum gives a wallop to the apple but, if you prefer, apple juice can be substituted. This time I made both Granny Smith and Honeycrisp apples. They each hold their shape and bake extremely well so they are perfect for this recipe.
This is a great autumn dish that could be calling for a scoop of ice cream or a dollop of whipped cream. Or, eat one the way I like best ~ by itself! How can you resist?
Best Baked Apples
Ingredients:
6 Honeycrisp or Granny Smith apples
¼ c. raisins
¼ cup dried apricots, chopped
2 tablespoons dried cherries, chopped
Dark rum, to cover
½ c. chopped pecans
1 tablespoon Saigon cinnamon
½ c. brown sugar (I use Splenda)
Butter
Method:
Soak raisins, apricots and cherries in enough rum to cover.
While the fruit is soaking, core the apples to 1/2” of the bottom of the apple. Use a small spoon to dig out the seeds. Make the holes on the top of the apple 1” wide.
Place apples in a baking dish.
Mix nuts, cinnamon and brown sugar.
Combine nuts and drained fruit.
Stuff the nut and fruit mixture into the apples.
Dot top of each apple with ¼ teaspoon butter.
Bake at 350 degrees for 50-55 minutes until they are fork tender.
Serve warm with vanilla ice cream, if desired.

Strawberry Daiquiris for Your Valentine

We all know that cards, candy, flowers, and a gourmet meal (or a reserved table at your local White Castle ) finishing with a fantastic dessert are the customary things to give on Valentine’s Day. However, how about surprising your Valentine with a sinfully soothing cocktail at the end of a perfect day? After all, it beats those little candies (you know ~the “conversation hearts”) for sustenance!
Daiquiris always include rum, sugar and lime or lemon juice but, they can also have other types of liquor such as tequila. Daiquiri is also the name of a beach in Cuba with an iron mine nearby. The cocktail was supposedly named by some American contractors working in the mine around 1800. The story goes that they ran out of gin at the bar and with a huge supply of sugar, rum and citrus juices available to them, they decided to combine these ingredients with crushed ice in a glass. They also added a sugar syrup and mixed it all together to produce a drink that wasn’t too sweet and had a bite to it.
Strawberry daiquiris are light and refreshing with that sweet/sour thing going on, ending up in a beautiful, dazzling red color. Since red is the color for Valentine’s Day, here is the perfect, delicious cocktail for you and your sweetheart!
STRAWBERRY DAIQUIRIS
Ingredients:
2 ½ ounces light rum
1 ounce lime juice
½ ounce Triple Sec
½ teaspoon superfine sugar
1 cup ice
5 strawberries
Strawberries for garnish
Method:
Mix all ingredients in a blender for about ½ minute at high speed until smooth. Pour into a tall glass and garnish with strawberry.
Serves 2
