Pineapple Buttermilk Muffins

3 strips bacon
1 c. sifted flour
1 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1 c. cornmeal
1/2 c. crushed pineapples, drained
2 eggs
1 1/2 c. buttermilk
2 tbsp. brown sugar
1/4 c. bacon drippings

Heat oven to 425 degrees. Grease muffin tins. Fry bacon until crisp. Sift flour, baking powder, baking soda and salt into a mixing bowl. Add cornmeal and pineapple. Put the eggs, buttermilk, sugar and drippings into a blender, cover and mix until smooth. Pour into flour mixture and stir only until flour is moistened. Fill prepared muffin tins 2/3 full. Crumble crisp bacon on top of each muffin. Bake for 15-20 mins or until done. Makes 12.

You can omit the crumbled bacon on top of the muffins if you want, thats entirely up to you.
