MIXED VEG PARATHA / MIXED VEGETABLE STUFFED PARATHA

I always wanted to try this mixed vegetable paratha,and when I saw my sis in law’s post - How to make square parathas, I was way too tempted. So I tried to make square parathas with stuffing to suit my kids taste,with spices and his favourite veggies. He loved it a lot and here after he wants ‘only’ square parathas!

Ingredients: (for no onion no garlic version,just omit them and follow the same recipe)
Potato,small sized | 2 |
Frozen/fresh peas | 1/4 cup |
Carrot and beans, finely chopped | 1/4 cup |
Onion | 1,Finely chopped |
Tomato | 1,de-seeded & finely chopped |
Corainder leaves,chopped | 2 tblsp |
Ginger garlic paste | 3/4 tsp |
Fennel or cumin seeds | 1 tsp |
Oil | 2-3 tsp |
Salt | As needed |
Turmeric powder | 1/8 tsp |
Garam masala powder | 1/2 tsp |
Red chilli powder | 1/2 - 3/4 tsp |
Wheat flour/Atta | 1 cup , heaped |
Oil | 1 – 2 tblsp |
Salt | As needed(3/4 tsp) |
Warm water | As needed |
Method:
- Pressure cook potatoes cut in to 8 and peas with little water and carrot,beans with a tsp of water sprinkled,separately kept in another vessel.(for 3-4 whistles)
- After done,drain the water immediately in the potato and peel the potato skin and mash it along with peas.Also drain water from carrot,beans, if any left in the vessel.
- Make a soft and pliable dough, as we do for roti and keep covered. Use warm water to get soft dough..
- Heat a pan with oil and temper with fennel/cumin seeds and add onion and fry till soft. Add Ginger garlic paste and fry for a minute in low flame.
- Add tomato and fry for a minute,followed by carrot beans,Fry for a minute
- Add turmeric,garam masala,red chilli powder,salt and coriander leaves and give it a quick stir in medium flame.
- Add the mashed potato and peas and mix well until everything blends and fry in low flame for 2-3 minutes.
- Cool down and make 6 equal sized balls. Make six equal sized balls from the dough as well.
- First roll a ball of dough as we do for roti and keep the stuffing in the centre.
- Fold from the left first and then from right as shown in the below picture.
- Then fold from above and then below to for a square packet.
- Dust the pack generously with maida and roll into square paratha. While rolling the paratha will tend to turn round shaped,but try to maintain the shape by rolling only in the corners in between to retain the shape.(This is what I call square
)
- Heat tawa and drizzle oil and toast both sides in medium flame till golden spots appear.
- Serve with curd/dahi or any other raita of your choice.Yummy and flavourful!!
