This is a delicious and easy to make blueberry cake recipe. You can use fresh or frozen blueberries. I really enjoy the crumb topping on this cake!
Blueberry Crumb Topping Cake
1/2 cup shortening
1 1/2 cup granulated sugar
1 cup milk
2 eggs
4 cups flour
4 teaspoons baking powder
1 teaspoon salt
4 cups fresh or frozen blueberries
In a large bowl, cream shortening with the granulated sugar. Beat well and then add the eggs. Beat mixture for 2 minutes. Stir in the dry ingredients, alternately with a little milk after each addition, beat batter until smooth. Fold in the blueberries. Preheat oven to 350 degrees and let it heat up while you make the crumb topping.
Crumb Topping
1 cup granulated sugar
2/3 cup flour
1 teaspoon cinnamon
1/2 cup shortening
In a small bowl, combine the above ingredients together until it forms a crumbly mixture. Sprinkle the crumbs on top of your cake batter.
Place cake in a 350 degree oven and bake for 45-50 minutes. I used a 9 x 13" glass baking pan.
