Grandma's Crock Pot Mild Chili Recipe

It's been pretty cold here in Central PA the past week and we were in the mood for chili today. Here is one of my husbands favorite chili recipes.

Mild Chili Recipe

1 1/2 lb. ground beef
1 clove garlic
1 lg. onion, chopped
1 tsp. salt
1 tsp. pepper
2-3 Tbsp. chili powder
1/4 tsp. red pepper
2 lg. cans of kidney beans
1 tsp. paprika
1 tsp. basil
1 tsp. oregano
4 c. tomato juice
1 can crushed tomatoes
1 sm. can mushrooms

Brown the ground beef with the onions and garlic. Drain grease. In a large kettle, add all of the ingredients together and simmer uncovered for 60 minutes. You can also do this in your crockpot over low heat setting for 3 hours. Makes 4 servings.

This recipe freezes well. Just fill your freezer containers 80% full. Label and date them. I date mine no longer than 9 months.
