Corn Fritter's Recipe
3 egg whites
3 egg yolks
1 1/2 or 2 cups canned whole corn, drained
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup flour
1/2 cup vegetable oil
Using your microwave, heat up the canned corned and then drain juice. In a large bowl, beat the egg whites until stiff. Add in the heated corn, salt, pepper and flour and beat until well blended. Fold in the egg whites. Drop batter by the spoonful into hot oil in your deep fryer (set at 350 degrees) until brown. You can also pan fry them in vegetable oil until brown on both sides. Serves 4.
