Baked Apple Stuffed Pork Chops
1 cup diced apples
1/4 cup raisins
3/4 cup bread crumbs
3/4 teaspoon salt
1 1/2 tablespoons granulated sugar
1 tablespoon onions, minced
2 tablespoons butter
3 tablespoons hot water
4 pork chops, 1/2" thick with pocket
salt and pepper to taste
1/2 cup water
Mix together the apples, raisins, bread crumbs, salt and sugar in a large bowl. Saute onions in butter for 5 minutes and then add to the bread crumb mixture. Add hot water, blend. Sprinkle salt and pepper on inside pocket of pork chops. Fill pockets with stuffing mixture, fasten close with a toothpick. Brown pork chops well on both sides. Place pork chops in a large glass baking dish. Add 1/2 cup water to drippings in the fry pan and then pour drippings into the baking dish. Cover baking dish with foil or lid. Bake in a preheated 375 degree oven for 1 hour.
