Tangy Turnips

This time of year is great for root vegetable dishes. Turnips are a good source of potassium, fiber, Vitamin C and calcium; low in carbohydrates and calories, plus they have a unique taste.
If you have never eaten turnips, they have a firm texture, and a very mild cabbage or radishy taste, though not as pungent as a radish and a little sweeter. Turnips can be roasted, mashed like potatoes, grated for a slaw-type salad, added to a soup, eaten raw, or boiled and served with just a little butter and salt and pepper. This time though, I wanted something a little different and then I eyed the bacon in the refrigerator…
Who doesn’t like bacon! Combine cooked turnips with a little bacon, add a touch of vinegar and sugar and VOILA! You have a great vegetable dish! This is delicious if you like turnips as much as we do!
Tangy Turnips
Ingredients:
6 medium turnips, peeled and sliced
1 teaspoon salt
4 slices diced bacon
3 teaspoons apple cider vinegar
1 teaspoon sugar, or less; depending on your taste
Salt and pepper, to taste
Method:
Place turnips in saucepan, cover with water.
Add salt and bring to a boil.
Cover, reduce heat and simmer for 15 to 20 minutes until tender.
Drain and set aside.
Meanwhile, fry bacon in a large skillet until crisp.
Discard skillet drippings, leaving a scant teaspoon in the skillet.
Add vinegar and sugar, blend well.
Add turnips and toss.
Serve
