Mom’s Spinach Bars




When I was a kid, I ate just about everything, that is, except potato soup when Mom cooked it and spinach in any form.  Maybe it is an acquired taste; but anyway, I love it now.  I think its great fresh in a salad; especially wilted salad, baked in a casserole or straight out of the can and heated up.  Fortunately, Bill likes spinach also.  But, of course, not everyone does.  This recipe of Mom’s might make a spinach lover out of those in your family that refuse it. 

Spinach has great color and looks so appealing when it is cooked.  This is a tried and true recipe, quick and easy to prepare.  Just blend the ingredients together, toss it in the oven and then prepare the rest of your meal while it is baking.  Easy enough! 

I have never added any kind of cheese to this recipe but, it would be a great addition.  I like it with a few more mushrooms.  Should you try it, just be sure to squeeze the water out of the spinach well with paper towels.  This is easy, easy and delicious!  I hope you give it a try and it turns you into a spinach lover too!

Mom’s Spinach Bars                                        

Ingredients and method:                                                                                    

Melt ½ stick butter in a 9”x13” baking dish.

In a bowl, mix:
3 large eggs
1 cup flour
1 teaspoon baking powder
1 cup milk
1 teaspoon salt
½ teaspoon pepper
2 cloves garlic, chopped
1 (16 ounce) package frozen chopped spinach, thawed and water squeezed out.
1 small chopped onion
6 mushrooms chopped

Pour mixture over butter and spread out.
Bake 350 degrees for 35 minutes.
Let cool a bit before cutting into squares.
Serve warm.
